Defatted cocoa powder (also known as lean cocoa or low-fat cocoa) is produced by pressing cocoa liquor to remove cocoa butter, resulting in a powder with ~10 to 12% total fat (vs. 50 to 55% of whole cocoa). Defatted cocoa retains all the flavonoids, theobromine, and bioactive compounds of the original cocoa, with a chocolate flavor intensity superior to that of whole cocoa in certain applications (higher concentration of aromatic compounds per gram). Uses
